Dairy-Free Potato Leek Soup

Ingredients
- Potatoes 2 lbs
- Leeks 3 cups sliced
- Vegetable broth 4 cups
- Garlic 3 cloves minced
- Onion 1 medium chopped
- Olive oil 2 tbsp
- Salt 1 tsp
- Pepper 1/2 tsp
- Thyme 1 tsp
- Bay leaf 1
Preparation Instructions
1. In a large pot, heat olive oil over medium heat. Add onions, leeks, and garlic. Cook until softened, about 5 minutes. 2. Add potatoes, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until potatoes are tender. 3. Remove bay leaf, then blend the soup until smooth using an immersion blender or in batches using a blender. 4. Adjust seasoning if needed and serve hot.
