Instructions
1. Prepare a 5% brine solution with water and fine sea salt. 2. Cut the chili and mango into pieces, and peel garlic cloves. 3. Place mango, chili, and garlic in a jar. Cover with brine solution, seal the jar, and ferment for one to two weeks, burping occasionally. 4. Strain the fermented mango and chilies, reserving the brine. 5. Blend the mango and chilies with white wine vinegar, lime juice, and some brine until smooth. 6. Add olive oil to the mixture for thickness and flavor. 7. Bottle the sauce and use it for adding a kick of flavor to dishes like chicken wings tossed with butter.
