Ingredients

  • Boneless, skinless chicken thighs 2 lbs
  • Soy sauce 2 tablespoons
  • Ground ginger 1/2 teaspoon
  • Black pepper to taste
  • Kosher salt to taste
  • Olive oil 2 tablespoons
  • Cornstarch 1/4 cup
  • All-purpose flour 1/4 cup
  • Yellow onion 1
  • Red bell pepper 1
  • Yellow bell pepper 1
  • Sugar equal parts to vinegar and ketchup
  • White distilled vinegar equal parts to sugar and ketchup
  • Ketchup equal parts to sugar and vinegar
  • Powdered ginger to taste
  • Pineapple juice to taste
  • Oil for coating
  • Pineapple chunks for garnish (optional)

Preparation Instructions

1. Preheat the oven to 500°F (260°C). 2. Cut the boneless, skinless chicken thighs into 1-inch cubes and season with soy sauce, ground ginger, black pepper, kosher salt, and olive oil. Add cornstarch and all-purpose flour, then bake in the preheated oven for 20-30 minutes. 3. Meanwhile, chop the onion and bell peppers, season with salt, pepper, and a little oil, and roast in the oven for 10 minutes. 4. After the initial baking time, stir the chicken pieces and return to the oven for another 10 minutes until golden brown. 5. Prepare the sweet and sour sauce by combining sugar, white distilled vinegar, ketchup, powdered ginger, and pineapple juice in a saucepan over medium-low heat until the sugar dissolves. Pour some over the baked chicken and return to the oven briefly. 6. Serve the oven-baked sweet and sour chicken with roasted vegetables, garnish with pineapple chunks if desired, and enjoy!
