Italian Wedding Soup

Ingredients
- Beef 1 lb
- Pork 1/2 lb
- Breadcrumbs 1/2 cup
- Parmesan 1/2 cup
- Eggs 2
- Herbs to taste
- Avocado oil as needed
- Onions 2, chopped
- Carrots 2, diced
- Celery 2 stalks, diced
- Garlic 3 cloves, minced
- White wine 1/2 cup
- Stock 8 cups
- Seasoning to taste
- Gluten-free orzo pasta 1 cup
- Parmesan cheese for topping
Preparation Instructions
1. In a bowl, mix together the beef, pork, breadcrumbs, parmesan, eggs, and herbs to form meatballs. 2. Sear the meatballs in a large pot with avocado oil until golden on two sides. 3. Add onions, carrots, and celery to the pot and saute until cooked through. Season with salt. 4. Add minced garlic and deglaze the pot with white wine. 5. Stir in the stock, herbs, and additional seasoning. Simmer for 10 minutes on low. 6. Add the meatballs and gluten-free orzo pasta, simmer for another 10 minutes. 7. Serve the soup hot, topped with parmesan cheese. Enjoy!
