Ingredients

  • red onions 2 small/medium
  • extra-virgin olive oil 2 tbsp
  • honey 4 tbsp
  • flaky sea salt 1/2 tsp
  • black pepper 1/2 tsp
  • fresh thyme 6-8 sprigs
  • frozen puff pastry 1 sheet
  • large egg 1
  • water 1 tsp
  • Balsamic glaze optional

Preparation Instructions

1. Preheat oven to 400°F and line a rimmed baking sheet with parchment paper. Slice onions into ¼-inch-thick rings, keeping the layers together. Drizzle olive oil and honey, sprinkle with salt and pepper, add thyme sprigs, then arrange onion slices over the top. 2. Roll out puff pastry into a rectangle slightly larger than the onion layer, drape it over the top, press edges with a fork, and brush with egg wash. 3. Bake for 25–30 minutes until pastry is puffed and golden. Let cool, flip the tart onto a cutting board, remove parchment, finish with balsamic glaze, fresh thyme, and salt. Slice and serve.
