Crispy Chilli Beef

Ingredients
- steak of choice 400 g
- eggs 1
- cornstarch enough to coat ~40 g
- sesame oil a spoonful (10 g)
- light soy sauce 20 g
- salt a sprinkle (3 g)
- white pepper a sprinkle (1 g)
- neutral oil for frying
- garlic 2-3 cloves
- fresh ginger 1" knob
- chile pepper of choice to taste
- ketchup 50 g
- vinegar 50 g
- honey 50 g
- dark soy sauce 10 g
- cooked rice for serving
- cilantro for garnish
- chinese red chili flakes to taste
Preparation Instructions
1. Start your rice first. Mix together all sauce ingredients until smooth. 2. Thinly slice beef and combine with beaten egg, salt, soy sauce, sesame oil, pepper, and MSG. Toss with cornstarch. 3. Fry beef in batches until crispy. Drain on a wire rack. 4. Sauté garlic, ginger, and chile pepper. 5. Add sauce to the pan, let it simmer and reduce. Add cooked beef and coat evenly. 6. Serve the sauced beef over rice, garnish with cilantro and chili flakes.
