One Pan Chicken & Potatoes

Ingredients
- Bone-in, skin-on chicken thighs 4-5
- Potatoes 3 medium
- Salt to taste
- Olive oil as needed
- Black pepper to taste
- Dijon mustard 1/4 cup
- Paprika less than 1 tbsp
- Duck sauce 1/4 cup
- Sriracha 3 tsp
- Ketchup 2 tsp
Preparation Instructions
1. Preheat oven to 425°F (218°C). 2. Wash and cut the potatoes, then lay them out in a pan. Season with a little salt and olive oil. 3. Season the chicken thighs with salt, pepper, Dijon mustard, paprika, and Montreal steak spice. 4. Add a the potatoes in the pan under the chicken 5. Bake covered in oven for about 35 minutes. + 10-15 min uncovered. Brush more sauce on after uncovering. 6. Once cooked, serve the chicken and potatoes family style. Optionally finish with a drizzle of olive oil and a squeeze of lemon.
