Hearty Veggie Soup

Ingredients
- Carrots 2 cups, chopped
- Celery 2 cups, chopped
- Potatoes 2 cups, diced
- Onion 1, chopped
- Garlic 2 cloves, minced
- Vegetable Broth 6 cups
- Tomatoes 1 can (16 oz), diced
- Green Beans 1 cup, chopped
- Corn 1 cup
- Thyme 1 tsp
- Rosemary 1 tsp
- Salt 1 tsp
- Black Pepper 1/2 tsp
- Olive Oil 2 tbsp
Preparation Instructions
1. Heat olive oil in a large pot over medium heat. 2. Add onions, carrots, celery, and garlic. Cook until onions are translucent. 3. Stir in potatoes, vegetable broth, tomatoes, green beans, corn, thyme, rosemary, salt, and black pepper. 4. Bring to a boil, then reduce heat and let simmer for 20-25 minutes, or until vegetables are tender. 5. Adjust seasoning if needed. 6. Serve hot and enjoy!
