Minestrone Soup

Ingredients
- onion 1, diced
- celery 6 stalks, diced
- garlic 5 cloves, minced
- carrots 3, peeled and diced
- zucchini 3, chopped
- spinach ½ c.
- elbow macaroni 8 oz.
- water 8 c.
- tomato paste 2 Tbsp
- oregano ½ tsp.
- basil 1 tsp.
- pepper ½ tsp.
- salt 2½ tsp.
- White beans 1/2 can
- Potato 1 diced
- 1 can Crushed tomatoes
Preparation Instructions
Sauté the onion, celery, garlic, and carrots in oil until soft. Add the spinach, zucchini, salt, and pepper, and sauté. Add the macaroni and cook it another 20 minutes. Add oregano, basil, tomato juice, and water to the pot and simmer for 45 minutes.
