Italian Wedding Soup

Ingredients

  • Beef 1 lb
  • Breadcrumbs 1 cup
  • Eggs 2
  • Herbs 1 tbsp
  • Avocado oil 2 tbsp
  • Onions 1, chopped
  • Carrots 2, chopped
  • Celery 2 stalks, chopped
  • Garlic 3 cloves, minced
  • White wine 1/2 cup
  • Stock 8 cups
  • Seasoning to taste
  • orzo or pasta 1 cup

Preparation Instructions

1. In a bowl, mix together beef, pork, breadcrumbs, parmesan, eggs, and herbs to form meatballs. 2. In a large pot, heat avocado oil over medium-high heat. Sear the meatballs until golden on two sides. 3. Add onions, carrots, and celery to the pot. Saute until cooked through, seasoning with salt. 4. Add minced garlic and deglaze the pot with white wine. 5. Stir in stock, herbs, and seasoning. Simmer for 10 minutes on low. 6. Stir in the meatballs and gluten-free orzo pasta. Simmer for another 10 minutes. 7. Serve the soup hot, topping with parmesan cheese for extra flavor.
