Minestrone Soup

Ingredients
- Onion 1, diced
- Celery 6 stalks, diced
- Garlic 5 cloves, minced
- Carrots 3, peeled and diced
- Zucchini 3, chopped
- Spinach ½ c.
- Salt 2½ tsp
- Pepper ½ tsp
- Oregano 1 tsp
- Basil 1 tsp
- Tomato Juice 2 c.
- Water 8 c.
- Elbow Shaped Macaroni 8 oz.
Preparation Instructions
1. Sauté the onion, celery, garlic, and carrots in oil until soft. 2. Add the spinach, zucchini, salt, pepper, oregano, basil, tomato juice, and water. 3. Bring to a boil, then cover and simmer for 40 minutes. 4. After 40 minutes, add the macaroni and cook for an additional 20 minutes until the macaroni is soft.
